Spring Fever?


Spring fever has arrived

but

not as I envisioned.

Right now, I wish I could be in 2 places at one time.

Here and California.

J.W. has had a difficult week with complications
from Type1 diabetes.

My little diva Annika has been in the ER twice with
a really high fever (106).
Why they didn't admit her is a mystery to me.
They really can't find a cause.
Now sweet Jayde is running the same high fever.
Poor Dorothy has her hands full.
I just pray that she and Hailey stay well.

The webcam has not been set up yet.
Too much running back and forth.
I swear, I could close my eyes and the car would
be able to get to my son's place on its own.

The other night when I was going through emails,
I had a nice surprise.
It could not have come at a better time (angel?).
I received an email from Jessica in Australia.
Someone had directed her to my website
and she did a post on it.

If you love antiques, fine furniture, and beautiful
interiors (you know you do), her website is a must visit.
Absolutely stunning pieces.

Creating things has been a source
of relaxation for me.
Years ago, I purchased old burlap bags.
At the time, I didn't know what I would do with them,
I just knew that they had my name on them.



I have made some embroidered burlap pillows
that I think turned out well.
Now I just have to finish them.


Well, this has been a long post for me.
I am off and running.
I need Scotty to beam me up-hehe.

A scrumptious sugar free pumpkin pie


This photo has absolutely nothing to do with this post but I just love it.
It is going to be around 105 today so it really doesn't feel like Fall.
This photo makes me feel like Fall is already here.

Many years ago when my son was just a pup, he was diagnosed with Type 1 Diabetes.
At that time I realized that every Holiday really is associated with food, lots of food.
I knew things would be different but I still wanted to be able to make desserts that he could enjoy.
This pumpkin pie is one of our favorite desserts.
No picture however, but I know you can all visualize-hehe.

***Amazing pumpkin pie recipe***

16- ounce can of pumpkin

2 large eggs

Dry brown sugar substitute (1/2 cup)

1/2 teaspoon salt

3 teaspoons of pumpkin pie spice

12- ounce can of evaporated skim milk

1/2 cup buttermilk biscuit mix


Combine all the ingredients and mix at medium speed until smooth.
Pour into a 9" pie pan (glass, stone, or ceramic works best) that has been greased.
Bake at 375 for 45 minutes, or until a knife comes out clean from the center of the pie.
Remove to a wire rack.

Let cool and serve.

Food exchanges per serving : 1 bread and 1/2 fat.
Calories: 117

I have been making this pie for 17 years and we all love it.
O.K, hubby prefers the real deal but he came to this party much later than the rest of us.

Hubby comes home from Co. today and I can't wait to pick him up.
I guess I still am a newlywed after almost 6 years.

Within Sight?

If you have visited The French Elements website, you have seen the category Sharing with others.

My youngest son (25) has multiple health problems including Type1 diabetes. He was diagnosed with it at the age of 9. I must admit, when he was hospitalized and the Doctor gave us the diagnosis, I didn't realize the magnitude of this disease. Blindness, kidney failure, nerve damage, stroke, are just a few of the complications that
are associated with Type1 diabetes. My son has been experiencing some of the complications for several years.
When I look back at what my life was like when I was 25, the difference is day and night.

JDRF is working non stop to find a cure. They are truly a great organization.
While November is known as National Diabetes Month, Diabetes is 12 months , 365 days a year.

A cure is within sight, I just pray that it is in time.
